All of the processes involved in transforming grape must to wine take place in the underground vinification area: de-stemming, fermentation in small stainless steel vats, pressing, racking, filtering, and finally bottling the wines.
The area is also the place where wine is stored in stainless steel tanks and where the casks are filled, emptied out and cleaned.
